Ingredients
- 1 piece Onion
- 2 clove Garlic
- 800 g Pumpkin
- 2 piece Leek
- 3 piece Potato
- 2 tbsp Olive oil
- 20 g Butter (Semi-salted)
- 1 handful Herbs
- 1 piece Vegetable stock cube
- 2 cup Water
- 1 pinch Black pepper
- 1 pinch Salt
Instructions

Peel and chop the onion and garlic.

Peel and cut the pumpkin into pieces.

Wash and slice the leeks.

Peel and dice the potatoes.

In a large pot, heat olive oil and butter over medium heat. Add onion and garlic, cook until softened.

Add pumpkin, leeks, and potatoes to the pot. Stir well.

Add herbs, vegetable stock cube, and water. Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.

Season with salt and pepper to taste.

Blend the soup until smooth using an immersion blender or a regular blender.

Serve hot.
