Sticky Date Pudding - French Dessert

Ingredients

  • 250 g Dates
  • 60 g Salted butter
  • 1 tsp Baking soda
  • 125 ml Water
  • 2 piece Eggs
  • 125 g Sugar
  • 180 g Flour
  • 1 sachet baking powder
  • 1 tsp Vanilla
  • 80 g Brown sugar
  • 40 g Butter
  • 100 ml Cream

Instructions

  1. Preheat oven to 350°F (180°C).

  2. Soak the dates in hot water with baking soda for 10 minutes.

  3. Cream together the salted butter and sugar.

  4. Add the eggs one at a time, then add vanilla.

  5. Incorporate the flour and baking powder.

  6. Drain the dates and add them to the batter.

  7. Pour the batter into a greased baking dish.

  8. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

  9. While the pudding is baking, prepare the sauce by melting butter and brown sugar in a saucepan.

  10. Stir in the cream and simmer until the sauce thickens slightly.

  11. Let the pudding cool slightly, then pour the sauce over it.

  12. Serve warm.
