Ingredients
- 3 piece Eggs (at room temperature)
- 200 g Dark chocolate (70-75% cocoa) (plus extra to serve)
- 0.5 tsp Sea salt flakes (crushed)
- 80 g Unsalted butter
- 4 tbsp Whipping cream
- 30 g Golden caster sugar
- 1 piece Orange zest (from one orange)
- 0.25 tsp Cayenne pepper (generous pinch)
- 1 piece Whisky (splash)
Instructions

Separate egg whites and yolks into separate bowls.

Melt chocolate, salt, and butter in a bowl over simmering water, ensuring the bowl doesn't touch the water.

Whisk egg yolks and 40ml warm water into the melted chocolate mixture until smooth.

In a separate bowl, whip the whipping cream until stiff peaks form. Gently fold into the chocolate mixture.

In a clean bowl, whisk egg whites until stiff peaks form. Gently fold into the chocolate mixture.

Stir in the orange zest and cayenne pepper.

Add a splash of your favorite whisky, brandy, or liqueur.

Divide the mousse among ramekins or glasses. Refrigerate for at least 12 hours to set.

Grate extra dark chocolate over the mousse before serving.
