Tuna Croquettes - Mexican Main Dish

Ingredients

  • 2 can Tuna (canned) (cans)
  • 500 g Potato
  • 100 g Cheese
  • 2 tbsp Parsley (chopped)
  • 1 piece Eggs
  • 0.5 cup Breadcrumbs
  • 1 tsp Salt (to taste)
  • 1 tsp Black pepper (to taste)
  • 2 tbsp Vegetable oil (for frying)

Instructions

  1. Boil the potatoes until soft. Mash them in a bowl.

  2. Add the tuna, cheese, and parsley to the mashed potatoes. Season with salt and pepper.

  3. Shape the mixture into small croquettes.

  4. Dip each croquette in beaten egg, then coat with breadcrumbs.

  5. Heat vegetable oil in a pan over medium heat.

  6. Fry the croquettes until golden brown on all sides.

  7. Remove the croquettes from the pan and drain on paper towels. Serve immediately.
