Coconut Prawns with Bell Pepper - Thai Main Course

Ingredients

  • 500 g Prawns
  • 2 piece Bell pepper
  • 400 g Peeled tomatoes
  • 200 ml coconut milk
  • 1 tsp paprika
  • 1 piece red onion
  • 0.5 piece Lemon
  • 2 clove Garlic
  • 2 tbsp Olive oil
  • 0.5 tsp Black pepper
  • 0.5 tsp Salt

Instructions

  1. Peel and devein the prawns.

  2. Dice the bell peppers and red onion.

  3. Heat olive oil in a pan over medium heat.

  4. Add garlic and red onion and cook until softened, about 3 minutes.

  5. Add bell peppers and cook for another 5 minutes.

  6. Add peeled tomatoes, coconut milk, paprika, salt, and pepper. Bring to a simmer.

  7. Add the prawns and cook until pink and cooked through, about 5-7 minutes.

  8. Squeeze lemon juice over the prawns before serving.
