Ingredients
- 200 long pasta (dried egg noodles)
- 2 tsp Vegetable oil (vegetable oil)
- 25 g Fresh ginger (finely chopped or grated)
- 3 clove Garlic (garlic cloves, finely chopped)
- 2 Red chilli (red chillies, finely chopped)
- 200 g Frozen peas (frozen peas)

Raw king prawns
(peeled raw king prawns)
Alternative: Silken tofu
- 2 Eggs (eggs, lightly beaten)
- 2 tbsp Light soy sauce (reduced-salt soy sauce)
- 1 Lime (lime, juiced)
- 1 Lime (lime, cut into wedges)
- 6 Spring onions (spring onions, sliced)
Instructions

Cook noodles according to package instructions, drain, rinse under cold water, and set aside.

Heat oil in a wok or large frying pan. Add ginger, garlic, and chillies. Stir-fry for 2-3 minutes until fragrant.

Add peas and prawns. Stir-fry for 2-3 minutes until prawns turn pink.

Push ingredients to the side of the pan. Add beaten eggs and scramble until just set.

Stir in noodles, soy sauce, lime juice, and spring onions. Toss everything together over high heat until well combined and heated through.

Serve hot, sprinkled with chopped coriander and lime wedges on the side.
