Oaty Energy Cookies - British Dessert

Ingredients

  • 50 g Apricots (dried) (ready-to-eat, chopped small)
  • 50 g Butter (soft)
    Alternative: vegan butter
  • 50 g light brown sugar
  • 2 tbsp Condensed milk (look for tube version)
    Alternative: Coconut condensed milk
  • 50 g Rolled oats
  • 85 g Self-raising flour

Instructions

  1. Heat oven to 150C/130C fan/gas 2. Line a baking tray with parchment. Cut dried apricots into small pieces.

  2. Cream butter and sugar in a bowl until smooth. Add condensed milk and mix well. Stir in oats and apricots, then mix in flour until combined.

  3. Form dough into one ball, divide into 6 portions, shape cookies, and place on tray.

  4. Bake for 25-30 minutes until golden. Cool on tray, then serve.
