Ingredients
- 600 ml Milk
- 50 g Butter
- 50 g Plain flour
- 4 piece Spring onions (finely chopped)
- 2 tsp Dijon mustard
- 1 bunch Chives (small bunch, snipped)
- 80 g Frozen sweetcorn
- 80 g Frozen peas
- 50 g Cheddar cheese (grated)
- 1 piece Fish pie mix (pack)

Boil the potatoes for 15-20 mins until tender. Drain well and return to the pan. Mash well.

Meanwhile, heat oven to 200C/fan 180C/gas 6. Gently heat the milk and 25g butter in a pan until the butter has melted. Remove from the heat and stir in the flour until smooth. Return to the heat and cook, stirring, until the sauce is very thick and smooth. Turn off the heat and stir in the spring onions, fish pie mix and mustard; season.

Stir half the chives, sweetcorn and peas into the potatoes. Spoon the fish mixture into an ovenproof dish and top with the mash. Sprinkle with cheese and remaining chives. Dot with the remaining butter.

Bake for 20-25 mins until golden and piping hot.
