Easy Breakfast Wrap - British Breakfast

Ingredients

Ingredients for Easy Breakfast Wrap
  • 1 tbsp Olive oil
  • 0.25 piece red onion (finely chopped)
  • 0.25 piece Red bell pepper (finely chopped)
  • 60 g Spinach
  • 2 piece Eggs
  • 1 piece flour tortillas
  • 30 g Feta cheese (crumbled)
  • 0.25 tsp chilli flakes
  • 1 to_taste Salt
  • 1 to_taste Black pepper

Instructions

  1. Heat the olive oil in a frying pan over a medium heat. Add the red onion and red bell pepper and cook for 5 minutes, or until softened.

  2. Add the spinach and cook for a further 2 minutes, or until wilted. Season with salt and black pepper.

  3. Crack the eggs into the pan and cook for 3-4 minutes, or until cooked to your liking.

  4. Warm the tortilla in a dry frying pan or microwave for 30 seconds until soft and pliable.

  5. Place the tortilla on a plate and spoon the egg and vegetable mixture into the centre. Top with the feta and chilli flakes.

  6. Fold in the sides of the tortilla and roll up tightly. Serve immediately.
