Ingredients
- 2 tbsp Olive oil
- 1 piece Onion (chopped)
- 1 piece Green bell pepper (chopped)
- 1 piece Dried chilli
- 1 piece Garlic (whole head, cut in half)
- 1 bunch coriander (chopped)
- 1 handful Marjoram (small, chopped)
- 100 g Smoked bacon
- 500 g Dried black beans (soaked overnight)
- 1 piece chicken stock cube
- 2 pinch Sea salt (big pinches, to taste)
- 2 pinch Black pepper (freshly ground, to taste)

Instructions

Heat olive oil in a large saucepan. Add onion, green pepper, chilli, garlic, marjoram, and bacon. Cook until onions and peppers soften, about 5-10 minutes.

Add black beans, crumble in the stock cube, and add enough water to cover. Reduce heat and simmer gently for 2-3 hours until beans reach a stew-like consistency.

Season with sea salt and black pepper to taste. Remove any herb branches and bacon before serving. Garnish with chopped coriander and marjoram.
