Zucchini Parmigiana - Italian Main Course

Ingredients

  • 7.5 piece zucchini (medium-sized)
  • 400 g Ricotta cheese
  • 400 ml Tomato passata
  • 1 piece Garlic

Instructions

  1. Preheat oven to 180°C (350°F). Slice the zucchini lengthwise using a mandoline. Arrange zucchini slices on a baking sheet with olive oil and salt. Bake for 10-15 minutes, flipping halfway through.

  2. In a saucepan, sauté garlic in olive oil. Add tomato passata, salt, and pepper. Simmer over low heat for 15 minutes, until slightly reduced.

  3. In a bowl, mix ricotta cheese with salt and pepper.

  4. Layer zucchini, tomato sauce, ricotta mixture, and Parmesan cheese in a baking dish. Repeat layers.

  5. Bake in the preheated oven for 30 minutes, or until golden brown.

  6. Garnish with fresh basil leaves before serving.
