Vegan Coconut Curry Soup - Indian Healthy

Ingredients

  • 4 cup coconut milk
  • 2 tbsp Curry powder
  • 200 g tofu
  • 0.5 piece Onion (Chopped)
  • 2 clove Garlic (Minced)
  • 4 cup Vegetable broth
  • 2 tbsp Olive oil
  • 1 to_taste Salt
  • 1 to_taste Black pepper

Instructions

  1. Heat olive oil in a pot over medium heat.

  2. Add chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.

  3. Add curry powder and cook for 1 minute more, stirring constantly.

  4. Pour in vegetable broth and coconut milk. Bring to a simmer.

  5. Add tofu cubes to the pot and simmer for 15 minutes, allowing the flavors to meld.

  6. Season with salt and black pepper to taste.

  7. Serve hot and enjoy!
