Spinach and Mozzarella Puff Pastry - French Appetizer

Ingredients

  • 1 piece Puff pastry
  • 500 g Spinach
  • 200 g crème fraîche
  • 125 g Mozzarella
  • 50 g Pine nuts
  • 1 piece Eggs
  • 200 g crème fraîche (Vegan alternative)
    Alternative: Coconut yogurt
  • 125 g Mozzarella (Vegan alternative)
    Alternative: vegan mozzarella

Instructions

  1. Preheat oven to 350°F (180°C).

  2. Cook spinach in a pan until wilted. Drain excess water.

  3. In a bowl, mix cooked spinach, crème fraîche, mozzarella, and pine nuts.

  4. Unroll puff pastry and spread spinach mixture evenly over it.

  5. Roll up the puff pastry tightly.

  6. Cut the roll into 1-inch thick slices.

  7. Place slices on a baking sheet lined with parchment paper.

  8. Brush each slice with beaten egg.

  9. Bake for 15 minutes, or until golden brown. Serve warm.
