Ingredients
- 300 g Spaghetti
- 2 tbsp Olive oil
- 240 g Sardines in oil (2 x 120g tin)
- 1 piece Onion (chopped)
- 1 clove Garlic (crushed)
- 100 g Kale
- 0.5 piece Lemon (juice only)
- 1 pinch Red pepper flakes (to taste)

Instructions

Cook spaghetti according to package directions.

While pasta cooks, heat olive oil in a pan over medium heat.

Add chopped onion and cook until softened, about 5 minutes.

Add crushed garlic and cook for another minute until fragrant.

Drain sardines, reserving the oil. Add sardines to the pan and break them up with a spoon.

Add kale to the pan and cook until wilted, about 3-5 minutes.

Drain spaghetti, reserving some pasta water.

Add spaghetti to the pan with the sardine and kale mixture. Toss to combine.

Add lemon juice and red pepper flakes. Toss again.

If the pasta seems dry, add a little reserved pasta water to moisten.

Serve immediately.
