Potato & Paprika Tortilla - Spanish Main Dish

Ingredients

  • 3 tbsp Olive oil
  • 1 piece Onion (sliced)
  • 500 g Potato (peeled and thinly sliced)
  • 1 tsp smoked paprika
  • 6 piece Eggs (beaten)
    Alternative: Tofu scramble
  • 10 g Parsley (fresh, chopped)

Instructions

  1. Heat olive oil in a non-stick frying pan. Fry onion and potatoes gently for 15-20 minutes until softened.

  2. Sprinkle smoked paprika over the mixture and stir well.

  3. Beat eggs (or use tofu scramble) and season with salt and pepper.

  4. Pour eggs into the pan, stir briefly, then cook over a low heat until just set, about 10 minutes.

  5. Flip the tortilla onto a plate, then slide it back into the pan to cook the other side for 5 minutes.

  6. Scatter with parsley before serving warm or at room temperature.
