Easy Spanish Chicken - Spanish Main Course

Ingredients

  • 4 piece Chicken breast
  • 400 g Butter beans (canned, drained)
  • 100 g chorizo (cooking chorizo, sliced)
  • 150 ml red wine
  • 200 g Green beans (to serve)
  • 1 tbsp Olive oil
  • 1 piece Onion (chopped)
  • 2 clove Garlic (cloves, crushed)
  • 400 g Chopped tomatoes
  • 200 ml chicken stock
  • 1 pinch Salt (to taste)
  • 1 pinch Black pepper (to taste)

Instructions

  1. Heat the olive oil in a large pan over a medium heat. Add the onion and cook for 5 minutes, or until softened.

  2. Add the garlic and chorizo and cook for a further 3 minutes.

  3. Add the chicken breasts and cook for 5 minutes on each side, or until browned.

  4. Pour in the red wine and cook for 2 minutes, or until reduced slightly.

  5. Add the chopped tomatoes and chicken stock. Season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the chicken is cooked through.

  6. Stir in the butter beans and cook for a further 5 minutes, or until heated through.

  7. Serve with green beans.
