Easy Vegetable Curry - Indian Main Course

Ingredients

  • 1 piece Onion (chopped)
  • 2 clove Garlic (cloves, crushed)
  • 2 tbsp Vegetable oil
  • 2 tbsp Curry powder
  • 1 can Chopped tomatoes
  • 0.25 piece Cauliflower (small, cut into florets)
  • 0.25 piece Broccoli (small, cut into florets)
  • 1 cup Frozen peas
  • 4 tbsp Yogurt (plain) (plus extra to serve)
  • 0.25 bunch Fresh coriander (roughly chopped)
  • 0.25 tsp Salt (to taste)
  • 0.25 tsp Black pepper (to taste)

Instructions

  1. Chop the onion and crush the garlic.

  2. Heat the oil in a large pan and add the onion and garlic. Cook for 5 minutes, or until softened.

  3. Stir in the curry powder and cook for 1 minute.

  4. Add the chopped tomatoes, cauliflower and broccoli. Bring to a simmer and cook for 20 minutes, or until the vegetables are tender.

  5. Stir in the frozen peas and cook for a further 5 minutes.

  6. Stir in the yogurt and coriander and season to taste.

  7. Serve with extra yogurt and rice or naan bread.
