Ingredients
- 1 piece Onion (chopped)
- 2 clove Garlic (cloves, crushed)
- 2 tbsp Vegetable oil
- 2 tbsp Curry powder
- 1 can Chopped tomatoes
- 0.25 piece Cauliflower (small, cut into florets)
- 0.25 piece Broccoli (small, cut into florets)
- 1 cup Frozen peas
- 4 tbsp Yogurt (plain) (plus extra to serve)
- 0.25 bunch Fresh coriander (roughly chopped)
- 0.25 tsp Salt (to taste)
- 0.25 tsp Black pepper (to taste)
Instructions

Chop the onion and crush the garlic.

Heat the oil in a large pan and add the onion and garlic. Cook for 5 minutes, or until softened.

Stir in the curry powder and cook for 1 minute.

Add the chopped tomatoes, cauliflower and broccoli. Bring to a simmer and cook for 20 minutes, or until the vegetables are tender.

Stir in the frozen peas and cook for a further 5 minutes.

Stir in the yogurt and coriander and season to taste.

Serve with extra yogurt and rice or naan bread.
