Roast rack of lamb with rosemary - British Main Course

Ingredients

  • 2 piece Rack of lamb
  • 4 clove Garlic
  • 2 handful Rosemary
  • 2 tbsp light olive oil

Instructions

  1. Preheat the oven to 200°C (180°C fan/gas mark 6).

  2. Crush the garlic cloves with the side of a knife and roughly chop the rosemary.

  3. Rub the lamb racks with olive oil, then season generously with salt and pepper.

  4. Press the garlic and rosemary into the fatty side of the lamb.

  5. Roast for 25-30 minutes for medium-rare, or longer if you prefer it more well-done. Use a meat thermometer to ensure internal temperature is to your liking.

  6. Let the lamb rest for 10 minutes before carving between the ribs to serve.
