Crunchy Baked Mussels - Italian Appetizer

Ingredients

  • 1 kg Mussels (cleaned)
    Alternative: tofu
  • 100 g Breadcrumbs (fresh)
  • 2 clove Garlic (crushed)
  • 15 g Parsley (chopped)
  • 30 g Parmesan cheese (grated)
    Alternative: nutritional yeast
  • 1 tsp lemon zest
  • 2 tbsp Olive oil

Instructions

  1. Heat oven to 200C. Place cleaned mussels in a large pan with a splash of water. Cover and cook until shells open, about 5 minutes.

  2. Remove mussels from shells, keeping half shells for baking. Discard any that remain closed.

  3. Mix breadcrumbs, garlic, parsley, parmesan (or nutritional yeast), lemon zest, and olive oil in a bowl.

  4. Place mussels back into half shells. Top with breadcrumb mixture.

  5. Arrange on a baking tray and bake for 10 minutes until golden and crisp.

  6. Serve hot with lemon wedges if desired.
