Mussels
(cleaned)
Alternative: tofu
- 100 g Breadcrumbs (fresh)
- 2 clove Garlic (crushed)
- 15 g Parsley (chopped)

30 g
Parmesan cheese
(grated)
Alternative: nutritional yeast
- 1 tsp lemon zest
- 2 tbsp Olive oil
Instructions

Heat oven to 200C. Place cleaned mussels in a large pan with a splash of water. Cover and cook until shells open, about 5 minutes.

Remove mussels from shells, keeping half shells for baking. Discard any that remain closed.

Mix breadcrumbs, garlic, parsley, parmesan (or nutritional yeast), lemon zest, and olive oil in a bowl.

Place mussels back into half shells. Top with breadcrumb mixture.

Arrange on a baking tray and bake for 10 minutes until golden and crisp.

Serve hot with lemon wedges if desired.
