Cod Fillet with Cherry Tomatoes and Olives - Italian Main Course

Ingredients

  • 400 g Cod fillet
  • 3 tbsp Olive oil
  • 2 clove Garlic (crushed)
  • 250 g Cherry tomatoes (halved)
  • 50 g Black olives (pitted)
  • 1 tbsp Capers
  • 1 pinch Oregano
  • 1 to_taste Salt
  • 1 to_taste Black pepper
  • 1 handful Parsley (chopped)

Instructions

  1. Heat olive oil in a large pan over medium heat.

  2. Add garlic and cook until fragrant, about 1 minute.

  3. Add cherry tomatoes, olives, capers, oregano, salt, and pepper. Cook for 10 minutes, stirring occasionally, until the tomatoes soften.

  4. Place the cod fillets in the pan with the tomato mixture. Cover and cook for 5-7 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. Sprinkle with fresh parsley and serve immediately.
