Stuffed Tomatoes with Beef and Curry - French Main Dish

Ingredients

  • 8 piece Tomato
  • 500 g Minced beef
  • 500 g Minced beef (Substitute with plant-based mince for a vegan option)
    Alternative: tofu
  • 1 piece Onion
  • 2 clove Garlic
  • 2 piece Bread (slices)
  • 2 tsp herbes de provence
  • 2 tbsp Olive oil
  • 1 pinch Black pepper
  • 1 pinch Salt
  • 2 tsp Curry powder
  • 6 tbsp rice

Instructions

  1. Preheat oven to 180°C (350°F).

  2. Cook rice according to package instructions.

  3. Cut the tops off the tomatoes and scoop out the pulp. Reserve the pulp.

  4. In a bowl, combine minced beef, chopped onion, minced garlic, bread soaked in water and squeezed, herbes de Provence, curry powder, salt, and pepper.

  5. Add the reserved tomato pulp and cooked rice to the meat mixture. Mix well.

  6. Stuff the tomatoes with the meat mixture.

  7. Place the stuffed tomatoes in an oven-safe dish, drizzle with olive oil.

  8. Bake for 50 minutes.

  9. Serve hot.
