Spicy Scrambled Eggs with Chapatis - Indian Breakfast

Ingredients

  • 1 tbsp Olive oil
  • 1 piece Onion (chopped)
  • 1 piece Tomato (chopped)
  • 1 piece green chilli (finely chopped)
  • 0.5 tsp ground cumin
  • 0.25 tsp Turmeric
  • 4 piece Eggs (beaten)
    Alternative: Tofu scramble
  • 10 g coriander (fresh, chopped)
  • 4 piece chapati (to serve)

Instructions

  1. Heat olive oil in a frying pan. Fry onion until softened, about 5 minutes.

  2. Add tomato, green chilli, cumin, and turmeric. Cook for 3 minutes until softened.

  3. Pour in beaten eggs (or tofu scramble). Stir gently until just set and creamy.

  4. Season to taste. Stir in fresh coriander.

  5. Serve immediately with warm chapatis.
