Ingredients
- 1 tbsp Olive oil
- 1 piece Onion (chopped)
- 1 piece Tomato (chopped)
- 1 piece green chilli (finely chopped)
- 0.5 tsp ground cumin
- 0.25 tsp Turmeric

Alternative: Tofu scramble
- 10 g coriander (fresh, chopped)
- 4 piece chapati (to serve)
Instructions

Heat olive oil in a frying pan. Fry onion until softened, about 5 minutes.

Add tomato, green chilli, cumin, and turmeric. Cook for 3 minutes until softened.

Pour in beaten eggs (or tofu scramble). Stir gently until just set and creamy.

Season to taste. Stir in fresh coriander.

Serve immediately with warm chapatis.
