Mediterranean Garlic Shrimp Skewers - Mediterranean Main Course

Ingredients

  • 500 g Shrimp (peeled and deveined, tails on)
    Alternative: Tofu cubes
  • 4 clove Garlic (minced)
  • 3 tbsp lemon juice
  • 3 tbsp Olive oil
  • 3 tbsp Parsley (tbsp, chopped)
  • 1 tsp Oregano (tsp, dried)
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Instructions

  1. In a large bowl, whisk together garlic, lemon juice, olive oil, parsley, oregano, paprika, salt, and black pepper.

  2. Add shrimp and toss to coat. Cover and refrigerate for 15 minutes to marinate.

  3. Thread shrimp onto skewers.

  4. Preheat grill or grill pan over medium-high heat. Grill skewers for 2-3 minutes per side until shrimp are opaque and lightly charred.

  5. Serve immediately with extra lemon wedges if desired.
